Pizza has a thousand-year history. Ancient man learned how to bake flatbread, for this they used coals and a stone on which the bread was baked. All Mediterranean peoples used this recipe, and then olive oil began to be used and the flatbread was covered with herbs and seasonal vegetables. The same flatbread served as a plate, which allowed it to become a universal dish for hiking and work in the field.

The official prototype of pizza is considered to be flatbread, which was made in Ancient Egypt. About 6 thousand years ago, yeast was invented, and sourdough was used in the baking of these tortillas.

Then this recipe was borrowed by Ancient Greece, and from there it got to Rome, where the official history of this dish begins. But it was in Ancient Greece that pizza was cooked that most closely resembles its modern look. On the raw dough, the Greeks laid out cheese, herbs, onions and other vegetables, after which they poured olive oil and baked in fiery ovens. This dish was called “plakuntos” and was found even in the annals of Plato.

The most likely origin of the word “pizza” is associated with the Greek flatbread “pitta”.

The history of the appearance of pizza in the form that mankind knows now began in 1522. After the New World was discovered, tomatoes were brought to Europe from South America (from the Italian pomo d’oro – “golden apple”). For their bitter taste, tomatoes were considered poisonous, and two centuries passed before they firmly settled on the table of Europeans.

Therefore, it was not until the 17th century in Naples that the combination of pizza (flat, oven-baked bread) with tomato sauce and various fillings was born. Workers, who spent most of their time outside the home, needed hearty, cheap food to eat on the go. So pizza quickly became very popular among the common people.

Pizza has long been a purely Neapolitan street food that was sold straight from the stalls. This was the case until the 19th century. The first restaurant-pizzeria opened in 1830 in the center of Naples. It was called Pizzeria Port’Alba and it still works.
